Roasted Grape and Sausage Stuffing
  1. Heat large skillet over medium-high heat until hot. Take sausage out of casing and add sausage to pan. Cook until browned, about 10 minutes, stirring frequently to break up sausage. With slotted spoon, transfer sausage to large bowl. Leave sausage drippings in the pan.
  2. In same skillet, add your onions and celery and cook in the sausage drippings over medium heat and sauté until lightly golden. Add 2 cups of chicken broth to onion and celery, and bring broth to a boil until the onions and celery are tender and translucent, about 10 minutes, stirring occasionally.
  3. Preheat oven to 325 degrees F. Pour celery and onion mixture over sausage mixture in bowl. Stir in stuffing mix, 1 cup of chicken broth and grapes; toss to mix well.
  4. Spoon stuffing into 13- by 9-inch glass baking dish; cover with foil and bake 20 minutes. Remove cover; bake 10 minutes longer or until heated through and lightly browned on top.
