Holiday® Grapes Winter Kale and Arugula Salad

This Winter Kale and Arugula Salad is packed full with nourishing winter greens and big, juicy Holiday grapes. Made with homemade dressing, crunchy pecans and pumpkin seeds, these delicious winter flavors tie together with a sweet bite, thanks to Holiday grapes. This winter salad is the perfect balance of sweet and savory, plus it’s full of delicious texture.

Ingredients:

For the Salad:

  1. 1 cup of Holiday grapes, cut into halves
  2. 1 bunch of kale, chopped and stems removed
  3. 2 cups of arugula (or two large handfuls)
  4. ¼ cup shredded purple cabbage
  5. ¼ cup shredded zucchini
  6. ¼ cup pecans
  7. 2 tablespoons pumpkin seeds
  8. ½ – 1 tablespoon extra virgin olive oil (for the kale massage)

For the Dressing:

  1. ½ cup extra virgin olive oil
  2. ¼ cup honey or maple syrup
  3. ¼ cup apple cider vinegar
  4. 1 teaspoon dijon mustard
  5. 2 teaspoons high quality, aged balsamic vinegar
  6. 1 garlic clove, minced
  7. Pinch of salt and freshly ground black pepper

Instructions:

For the Salad:

  1. Prep the kale by removing the stems and tearing or chopping the leaves into small pieces.
  2. Add the kale to a large bowl and massage with the ½ to 1 tablespoon extra virgin olive oil and a sprinkle or salt.
  3. Once the leaves start to soften, add in the arugula and mix greens to combine evenly.
  4. Now you can add in purple cabbage and shredded zucchini to toss.
  5. Top with pecans, pumpkin seeds and sliced Holiday grapes
  6. Toss salad with dressing and all ingredients and serve or serve in single servings and dress each salad individually.
  7. This recipe serves 6-8 people.

For the Dressing:

  1. Add all of the ingredients into a mason jar or a medium sized bowl.
  2. If using the mason jar, you’ll seal tightly with a lid and shake until all the ingredients are fully combined.
  3. If using a bowl, you’ll just use a hand whisk to whisk the ingredients together.
  4. Once all the ingredients are fully combined, add to a mason jar for storage.
  5. Dressing will be good for one week stored in the fridge.

Tips:

If you are allergic to any nuts included in this recipe, feel free to swap out from your favorite nuts if not allergic. The nuts give this wonderful Holiday Grapes Winter Kale and Arugula Salad the perfect crunch so if not adding nuts I would recommend adding something that still has a crunch to it to complete the dish.

When you massage kale with oil or lemon juice, it helps break down the fibrous characteristic of kale making it much easier to chew and digest. An optional step but highly recommended for optimal taste and digestion.

If the oils in the dressing have hardened when refrigerated, hold the jar under warm water until they become liquid and give it a good shake.

If you want the dressing to be sweeter or saltier just add a little extra salt or honey. This dressing is super easy to adjust to any individuals liking.
